Thompson, chef/owner at Rockets Gourmet Wraps, 2809 First Ave., said he and his wife, Kayla, are borderline traditionalists when it comes to Thanksgiving.
“We’ve smoked a turkey over apple wood. It took longer than anticipated, but it was good,” Thompson said.
Thompson also likes to experiment with different kinds of stuffing. One of his favorites is made with artichokes and sourdough bread. The sourdough bread is toasted and he adds chicken stock, sautéed mushrooms and sliced canned artichokes. He also adds Parmesan cheese. A favorite side dish is brussel sprout gratin made with blackened brussel sprouts, a mild white cheese and pancetta.
