Background in cooking: I started working at Briarwood when I was 15. I worked my way up to kitchen manager at Applebee’s. Then I decided to go to culinary school and attended the Oregon Culinary Institute in Portland, Ore., for one year. I graduated in one year with a 4.0 in 2010. When I came back to Billings, I worked at the Mustard Seed, Walkers Grill and Jake’s. I was hired here a week and half before Uberbrew opened.
Most popular dish at Uberbrew: Plowman’s Platter, which is a traditional pub appetizer that includes sausages, veggies, cheeses, seasonal fruits, bread and sauces. Our most popular burger is the whiskey burger, which I make with a whiskey sauce that includes Jim Beam and pineapple juice.
Special skills: Since I started just before Uberbrew opened, I didn’t get to use a lot of my recipes on the menu. The salsa and chili are mine and the mac and cheese and the meat loaf. One guy liked the salsa sauce so much, he ordered a gallon of it for a house party he was having. I am also into smoking and they bought me a smoker that I plan on using for beef brisket and ribs on the new menu. We are smoking our wings now. I also want to add some vegetarian dishes to the menu because there are so many of them now. I am researching recipes. For the opening, I developed a beer bread pudding.
What do you like most about being a chef? It’s fun when you have a passion for it. When I was hired here, they told me ‘We’re not going to micromanage you. You just do what you do best.’ I like that kind of freedom. I want my recipes to go to the next level.
What cooking advice can you offer? Set small goals for yourself. Get out your favorite cookbook and make one new thing every week.
