What makes this dessert special? It’s the combination of flavors. My approach is to find a combination of flavors I can put together so that they compliment each other. I wanted to start with basil ice cream, then I brought in the orange curd, vanilla and chamomile syrup on the cake. Everything we do here is from scratch. I worked here for three months before I opened my first can. I asked, ‘Do we even have a can opener?’
What would you suggest serving with this dessert? Typically with dessert, I prefer coffee, but chamomile tea would be nice. Or champagne.
What entre of your menu would this be a good finish for? Probably the stuffed chicken or the sausage ragu.
What life’s drama would this dessert ease the pain of? Stress in general. It’s a good end to a fast-paced hectic day. It’s got the chamomile in it, so it is calming.
