Cooking with Vince: Lighten it up this summer with a tuna salad

If you like a light summer meal, the following recipe will suit you just fine.

It is a tasty, yet easy salad to prepare and will relieve some of the boredom of the usual fish dish. It's called Smoked Tuna Salad.

What you need:

Half-pound smoked albacore tuna or substitute smoked salmon

One bunch red or green leaf lettuce

Three sliced tomatoes cut into wedges

One large sweet purple onion sliced thin

Three sliced purple onions

Fresh ground Romano cheese

Olive oil and vinegar dressing or vinaigrette of choice

Half cup of cured Italian or Greek green olives

What you do:

Clean and tear apart the leaf lettuce and place in large salad bowl. Add the purple onions and scallions, then toss well. Next arrange the sliced tomatoes around the salad. Take the smoked fish and break it up and arrange over the top of the salad. Arrange over the salad the olives and finally lightly sprinkle the Romano cheese over the salad. Lastly, serve the oil and vinegar on the side.
