Brad Halsten of the Burger Dive is defending his burger title this week at the World Food Championship in Alabama.
After winning the World Burger Championship in 2016, Halsten put the winning burger — I’m Your Huckleberry — on his menu in Billings, using a line from his favorite film, “Tombstone.”
After winning $10,000 with the burger and getting into the food championship in 2016, Halsten is competing with his huckleberry burger again Friday. His second burger, required for the competition to combine burger with another protein, is a twist on his Blackened Sabbath Burger. Halsten will add chorizo to the burger.
Naming his burgers is almost as much fun as coming up with the flavors for them.
“If you look at the names on our burgers, you can see what I like,” Halsten said.
Since winning the burger championship last year and coming in eighth in the championship round, Halsten and the Burger Dive have hit the national spotlight.
“We’ve had quite a year with a lot of great opportunities,” Halsten said. “We were featured on ‘Man v. Food’ on Travel and we were in People Magazine."
The attention is fun and a boost to business, but Halsten said he has no plans to go bigger. He likes his spot on North 27th Street and the staff is so loyal that this year they are keeping the cafe open while the boss is out of town.
Halsten was driving to Orange Beach, Alabama, on Wednesday to get ready for the competition. He’s turning the trip into a family vacation. His dad, Gary, and son and daughter will meet him there.
“Orange Beach is really cool. It’s right on the Gulf. It’s a good place to take a little trip.”
Halsten plans to stream the Friday awards ceremony on his Burger Dive Facebook page. It starts at 6 p.m. Mountain Time.
If he wins the burger category again, Halsten goes to the Top 10 round on Sunday where $100,000 is up for grabs in the World Food Championship.
