Breakfast, lunch & dinner at Grains of Montana Restaurants & Bakeries have one thing in common that makes our restaurants truly special and unique. We feature the finest in freshly baked artisan breads, pastries, gourmet sandwiches and stone oven pizzas. All our baked goods made from the Spring Wheat flour grown and harvested in the fields of our 15,000 acre family farm in Nashua, Montana. The company's foundation is the Grains of Montana Restaurant & Bakery, created as a “fast-casual” restaurant with an upscale comfortable all American décor. The menu is wholesome, healthy, and priced competitively in the sandwich/artisan bread category.

From the waving fields of Nielsen Farms' Spring Wheat to the display case of delicious baked goods at any Grains of Montana Restaurant and Bakery restaurant, we make our food with the greatest care. That's because our artisan bakery wants happy customers. So, anything on the menu, whether it's a caramel roll, a thick slice of marble rye bread, or a steaming chicken artichoke pizza, is as good as it can possibly be. One reason our baked goods are prized by our customers is that the dough is allowed to ferment for a long period of time in order to reach its optimal flavor. No shortcuts are taken in this bakery. Restaurants with standards like ours are a winning combination of uniquely produced fare in an upscale fast-casual restaurant.

With its rolling hills and hearty weather, Nashua, Montana is the center of Big Sky wheat country. It is also home to Nielsen Farms, where we’ve been growing the highest quality spring wheat since 1965.

Only McNeal Spring wheat is grown on our 15,000-acre farm, and it’s produced using a crop rotation system. Alternating our fields between wheat and legumes replaces the nitrogen in the soil in a natural and environmentally friendly way. We take pride in our farming practices and how safe our wheat is as a food source. In fact, it’s so safe that during harvest time, our children eat its golden goodness right out of the hopper.

It was our desire to bring this same farm-fresh goodness to folks no matter where they lived. That’s why we created Grains of Montana, restaurants that offer the best that Big Sky Country has to offer.

From the time that the doors open, people are stopping in for a steaming cup of rich coffee and one of Grains’ signature breakfasts and surfing on our free Wi-Fi network. At lunch, people pack in to our deep booths to on thick soups and hearty sandwiches. At night, friends and families stop in to enjoy a thick-crusted pizza, loaded with Grains’ homemade sauce, our special combination of cheeses and a variety of delicious toppings. And on their way out, customers make sure to grab a loaf or two of our amazing artisan bread to enjoy at home.

Grains of Montana. Fresh-baked goodness from our family farm to your family table.

Things like ammonium sulfate, azodicarbonamide, L-cysteine hydrocloride and our favorite, diacetyl tartaric acid ester of mono-dyglycerides. These are just a few of the ingredients listed on the labels of bread you see in any grocery store and even in some bakeries.

Most bakeries use chemicals to keep their bread fresh on store shelves, retard mold and gift it a longer shelf life. They also use them to create bases—essentially box mixes that—that hide mistakes, speed the bread making process and allow untrained bakers to create their bread.

We produce only artisan breads, made from scratch without fillers or stabilizers, by people skilled in the art of baking. We give every dough the time it needs to ferment properly—at least 12 hours—and let it rise naturally. This process gives our bread its hearty texture, naturally savory taste and homemade goodness.

And that’s something that Diacetyl Tartaric Acid Ester of Mono-Dyglycerides just can’t do.
