Background in cooking: My husband and I have operated the restaurant, Raven’s Roost, in the Federal Building for 14 years. We also had a restaurant in the basement of Granite Towers. I used to cook a lot growing up. It was just me and my mom when I was growing up in Tennessee. I did a lot of the cooking.
What are your specialties? My favorite thing is the Spanish grilled polenta. You don’t find it very often. We also offer an Island Polenta Salad with shrimp and green chili polenta seared in garlic butter. Our special dessert is YAMs Foster, which is made like bananas foster, only we use yams cooked with apples and served over ice cream with brandied butter and brown sugar sauce. We top it with maple pecans and white chocolate.
What are the most popular items on the menu? The strawberry spinach salmon salad, which uses grilled salmon over crisp spinach and is topped with strawberries, sliced mushrooms, tomatoes, egg, parmesan cheese and warm pecans and bacon. The panini sandwiches are the most popular for sandwiches. We offer a turkey or a roasted veggie panini.
What cooking advice can you offer? Don’t be afraid to experiment. You don’t always have to follow a recipe, you can make it your own.
