When you have guests over for Christmas or New Year’s Day dinner, it’s nice to have many dishes for them from which to choose.

The following dish goes well with other choices or well as a stand-alone dinner. Venison Pie is also a great way to use up any venison leftovers.

 

What you need

Four cups leftover cubed venison or elk

Two cups cooked cubed potatoes

One cup frozen peas

One cup frozen corn

One cup frozen cut string beans

One cup diced cooked carrots

One cup chopped, sauteed onion

Four cups beef broth

Three tablespoons flour

Salt and pepper to taste

One package of refrigerated pie dough, or your own recipe for pie dough

 

What you do

Coat a large casserole dish with vegetable spray. Next, mix together well the meat, potatoes, peas, corn, string beans, carrots and onions in the casserole dish. Salt and pepper to taste. Blend the flour with the broth. Remember, the broth has salt in it, so do not oversalt. Pour the broth over the ingredients. Place the flattened pie dough over the ingredients in the casserole and crimp the edges. Cut V-shaped slits in the dough and place in a preheated 350-degree oven for 25 minutes or until casserole bubbles and is a golden brown. Serve with a tossed green salad.
