The following is a tasty recipe for Venison Cutlets. It doesn't take long to prepare and makes a great main course.

What you need:

4 cups, or more if needed, Italian-style bread crumbs

1 teaspoon salt

1 teaspoon garlic powder

1/4 cup dried parsley flakes

1 teaspoon coarse ground black pepper

1/2 cup grated Parmesan cheese

2 pounds venison steaks — tender cuts or tenderize other steak cuts

6 eggs

Olive oil to fry cutlets

What you do:

Blend together the first five ingredients. Dip the venison in the beaten eggs and then in the prepared bread crumbs.

In a frying pan, heat enough olive oil to fry the cutlets.

Add the breaded cutlets and cook until they are medium done and golden brown on each side.

Serve the venison cutlets with green beans and mashed potatoes.
